Crunchy Prawn Tacos

Ingredients

  • 8-10 jumbo prawns (or 1.5 lb shrimp, peeled and deveined)
  • 2 cups crushed SimplyProtein® Tortilla Chips - Hint of Lime
  • 1-2 large eggs
  • Vegetable oil or oil spray (depending on cooking method)
  • Coleslaw of choice
  • Corn tortillas
  • Toppings of choice (we love these with cilantro, red onion, hot sauce, and paprika)

  • 2 medium shallow bowls
  • Whisk or fork
  • Frying pan, air fryer, or sheet pan

These prawn tacos are crunchy, zesty, and the kind of meal everyone can make their own. Jumbo prawns get a crispy coat of crushed SimplyProtein® Tortilla Chips in Hint of Lime flavor. Then you can fry, air fry, or bake them until golden and ready for taco night. Pile them into warm corn tortillas with your favorite slaw and toppings.

We prefer prawns in this recipe for their plump texture and slightly sweeter taste, but you’re welcome to swap for shrimp if you’d like! 

Instructions: 

  1. In one bowl, whisk eggs. In a second bowl, add crushed SimplyProtein® Tortilla Chips.

  2. Dip each prawn or shrimp in the egg, shake off access, and then coat well in the crushed chips.

  3. Cook until prawns or shrimp are fully cooked through and the coating is crispy. Choose one method:

    1. Pan fry: Heat a thin layer of oil in a pan over medium heat and fry until golden, flipping once.

    2. Air fry: Preheat the air fryer to 400°F, lightly coat prawns or shrimp with oil and cook for 6 to 8 minutes, flipping halfway.

    3. Bake: Preheat the oven to 425°F, lightly coat prawns or shrimp with oil and bake for 10 to 12 minutes, flipping halfway.

  4. Build tacos with slaw, crispy prawns or shrimp, and your toppings of choice.
