SimplyProtein Italian Nachos
Makes 4 servings

1 1/2 bags of SimplyProtein Sea Salt tortilla chips

Italian Seasoning mix
1/2 tsp (2 mL) dried oregano
1/2 tsp (2 mL) dried basil
1/4 tsp (1 mL) garlic powder
1/4 tsp (1 mL) red chili flakes
1/2 tsp (2 mL) sea salt

Ingredients
1 cup (250 mL) Ricotta cheese
2 cups (500 mL) grated Mozzarella
3/4 cup (185 mL) pepperoni
1 cup (250 mL) fresh Mozzarella, torn into small pieces
6 pepperoncini peppers
1 cup cherry tomatoes on the vine

fresh basil leaves

  1. Combine the Italian seasoning mix with the ricotta cheese.

  2. Divide the herbed ricotta mixture in half. Set aside half for serving with the nachos.

  3. Preheat oven to 375°F.

  4. Layer half of the tortilla chips on a parchment-lined 9”x12” baking sheet or 12” cast iron frying pan.

  5. Sprinkle half of the grated mozzarella on top. Add half of the pepperoni and torn fresh mozzarella.

  6. Cover with another layer of the remaining tortilla chips. Sprinkle the remaining mozzarella and pepperoni over top. Add the fresh mozzarella.

  7. Dollop small spoonfuls of the herbed ricotta over top.

  8. Place the cherry tomatoes in the middle and pepperoncini peppers around them. Bake for 15 minutes or until the cheeses have melted, the cherry tomatoes have softened, and the ricotta is lightly golden brown.

  9. Top with fresh basil leaves. Serve immediately with the marinara sauce and the set-aside herbed ricotta.
