Watermelon Mango Salsa

Ingredients: 

  • 1 cup diced watermelon 
  • 1 medium mango, diced
  • ⅓ cup diced red onion
  • Handful of cilantro, chopped
  • 0.5 - 1 jalapeno, minced
  • Pinch of salt
  • Juice of two limes
  • Olive oil to top

Instructions: 

  1. Chop all ingredients and add to a bowl
  2. Squeeze lime juice, sprinkle salt and mix to combine 
  3. Top with a drizzle of olive oil 
  4. Enjoy with your favorite simply protein Tortilla chips
