Ingredients

  • 1 bag of your favorite Protein Tortilla Chips
  • 1 cup canned chickpeas, drained and rinsed
  • 1 medium beet, peeled
  • 1 tsp paprika
  • 1 lemon, juice
  • 1/3 cup olive oil
  • 1 tsp salt
  • 1 tbsp tahini
  • Parsley, feta, extra chickpeas (to top)

You’ll be tickled pink over this eye-catching Beet Hummus. It’s smooth, lemony, and naturally vibrant. Blend it up, swirl it into your favorite design, and scoop with our Protein Tortilla Chips for a crunchy, protein-forward pairing.

Instructions

  1. Chop the beet into small, even cubes and boil until mostly soft (about 15 minutes).

  2. Add all ingredients (except tortilla chips and toppings) to a food processor.

  3. Blend until smooth.

  4. Spread hummus on a plate or serve in a bowl.

  5. Top with feta, chopped parsley, extra chickpeas, and a drizzle of olive oil.

  6. Serve with your favorite Protein Tortilla Chips.
