BBQ Corn Salad Dip

Bring bold, smoky flavors to your table with this irresistible BBQ Corn Salad Dip. Grilled corn, peppers, and onions combine with juicy chicken, creamy avocado, and tangy feta, all tossed in a zesty chipotle-lime Greek yogurt sauce. Served with SimplyProtein® Hint of Lime tortilla chips, it’s the ultimate summer dip.

Ingredients:

  • 2 cobs of corn
  • 1 red pepper
  • 1 jalapeño
  • ½ red onion
  • 1 cup cooked, cubed chicken breast 
  • Green onion
  • ½ cup feta, crumbled 
  • 1 bag SimplyProtein® Hint of Lime tortilla chips
  • 1 avocado 
  • A handful of cilantro 

Sauce:

  • 1 cup Greek yogurt
  • 1 tbsp canned chipotle peppers
  • Juice of 1 lime
  • 1 tsp olive oil
  • Salt, pepper
  • ½ tsp smoked paprika 

Instructions:

  1. Cook the chicken to your preference.
  2. On the BBQ, grill corn, red pepper, red onion and jalapeño. 
  3. Once blackened, remove from heat and dice all vegetables.
  4. Combine vegetables and chicken, then mix.
  5. For the sauce, add all ingredients and whisk until incorporated. 
  6. Pour the sauce over salad and stir well.
  7. Top with feta cheese, more cilantro and green onion.
  8. Dip with your Hint of Lime tortilla chips.
